- Due to past volcanic eruptions, the area has deep and mineral rich soil that can sustain tea cultivation for many generations.
- A very diverse micro-climate allows for a great variety of tea cultivars to thrive in this region.
- Cultivation Notes:
- Shizuoka is the cradle of organic tea cultivation, with generations of traditional organic farming practices that promote vigorous growth and deep flavor in the tea plants.
- A wide variety of tea cultivars, along with a rich collection of Zairai, or native, indigenous tea trees grown from seeds, thrive in this region.
- Processing Notes:
- A blend of many cultivars are selected by the tea master. Blending tea is a complex task, requiring both knowledge and experience.
- As Zairai figures prominently in Haruno village, a good portion of leaves from these ancient "wild" tea trees goes into this Hojicha blend, distinguishing it from Hojicha from other sources.
- Immediately after harvest, raw tea leaves are first lightly steamed to stop oxidation from enzymatic fermentation to make a traditional Japanese green tea, then roasted by charcoal fire to express both umami and fruity sweet tastes.
- Tasting Notes:
- Caffeine Level: Very low. Traditionally, Hojicha is often served before bedtime for the soothing, comforting, and relaxing effects that encourage restful, deep sleep.
- Due to its low level of caffeine content and high nutrient content, it is safe to serve Hojicha to young children.
- Strong umami followed by deep and long lingering fruity sweetness. Distinct floral aroma with nutty, toasty and smooth, silky mouthfeel without bitterness or astringency.
- The "Goldilock" level of roast - not too light, not too dark, but just right - of this Hojicha showcase the expertise of the tea master. We, at Che Vivo, tasted literally hundreds of Hojicha made by that many tea masters over the course of years, unanimously voted for this one.
