- Shizuoka, located a mere 30 km or about 18 miles from Mount Fuji, is a prominent and ancient tea growing region dating back to the 1,200's.
- Due to past volcanic eruptions, the area has deep and mineral rich soil, abundant sources of pure water from ice and snow capped peaks, and clean, unpolluted air. These favorable growing conditions can sustain tea cultivation for many generations if they are wisely managed .
- A very diverse micro-climate allows for a great variety of tea cultivars to thrive in this region.
- Cultivation Notes:
- Shizuoka is the craddle of organic tea cultivation, with generations of traditional farming practices that promote vigorous growth and deep flavor in the tea plants.
- Yabukita is the most widely used cultivar to make Sencha. As a cultivar, it is greatly favored by tea farmers for its vigor, robustness and abundant yield. Tea drinkers also appreciate Yabukita Sencha for its elegantly classical balanced taste profile: strong umami, prolonged sweet aftertaste, with very little bitterness or astringency.
- As a prolific producer, Yabukita allows for an additional annual harvest at the beginning of winter, as the tea bushes experience a burst of growth before going into dormancy. This later harvest is designated as Bancha.
- Processing Notes:
- Like Sencha, Chumushi Bancha Yabukita is steamed to stop the enzymatic oxidation process to preserve the tea leaves' green color.
- Chumushi refers to the standard level of heat and amount of time in the steaming process, usually around 30 to 40 seconds
- Yabukita Bancha is a good source for minerals, including trace elements, and in particular iron. It is especially suitable for vegetarians / vegans and women during menstruation.
- Tasting Notes:
- Of the roughly 50 required essential and rare trace elements, Bancha provides about 30-40 trace elements, much more than any single food typically consumed around the world.
- Bancha is the most popular type of tea served in Japan, and the second most favorite among serious tea drinkers.
- While Bancha is suitable at anytime for anybody, it is especially recommended for vegetarians / vegans and women during menstruation.
- Caffeine Level: Very low, allowing Chumushi Bancha Yabukita to be served all day long without concern over caffeine disrupting a restful night sleep.
