  • Wazuka, a town located at the at southern edge of Kyoto Prefecture, is home to the world famous Uji method of tea processing. While Kyoto is a relatively small area of cultivation, producing only 3% of Japan’s total green tea production, it is world famous for its outstandingly fine quality of Gyokuro, Tencha [tea leaves which are ground into matcha], and Sencha.

 

  • Cultivation Notes:
    • Uji Hikari [Light of Uji] is a cultivar especially reserved for producing high-end exquisite tea such as Gyokuro and Tencha (tea leaves prepared for the making of Matcha).  
    • Kabuse is the practice of shading the tea plants for up to 3 weeks before harvest to enhance the aroma and phytochemical nutrients in the tea leaves.  
    • This Kabuse Sencha Uji Hikari is shaded for an optimal 20 days.  It offers a high level of L-Theanine similar to Matcha and Gyokuro grown in the same pristine conditions and fertile soil.
    • Shredded bamboo leaves are laid on the ground around each tea bush a the beginning of the Autumn season.  This serves as insulation and also a source of nutrients for the tea plant during its resting period.  The tea plants thrive with natural farming practices such as this one.  There is no need for artificial or toxic chemical interventions.
  • Processing Notes:  
    • Lightly steamed [Asamushi] to accentuate the slight astringent edge, enhancing the refreshing taste of this shade grown tea.
    • Kabuse Sencha Uji Hikari is cultivated and processed in the tradition of a high grade Matcha, except for the last step of stone-grinding the tea leaves into powder form.  
    • Omitting this last step of stone-grinding makes this tea more affordable while still offering the exquisite taste along with the health benefits of a highest grade Matcha
